Delicious and Simple Cod and Vegetable Bake
This is very tasty, simple and inexpensive.
It is also nice to eat cold the next day…
Serves 3
3 x 150g frozen or fresh cod steaks
Medley of peas, carrots and sweet corn
Broccoli
Cauliflower
1 Butternut squash
Don't be too strict on how much of each vegetable you use.
Go with what you have and what you prefer.
1 litre of plain yoghurt
1 tablespoon of light mayonnaise
1 tablespoon of tartar sauce
cheese (for sprinkling on top)- OPTIONAL
oregano (for on top)
Steam or boil the fish until done.
Steam all the vegetables until al dente (still slightly chewy)
Mix the yoghurt, mayo and tartar together.
Cut the cauliflower, broccoli and squash into bite size pieces
In a big bowl:
Add the fish and break into smaller pieces with a fork
Add all the mixed vegetables
Add the sauce
Mix it all together- ideally everything should be coated with the yoghurt sauce.
Now, place in a glass or ceramic bowl and sprinkle cheese and oregano over.
Place in a 190ºC preheated oven on for about 20 minutes- or until your cheese is the way you like it. Let stand for 10 minutes to cool a bit.
