Mamma Mia Meatballs
Very very simple. This is one of hubby's favourites.
Serves 3 (6 decent size meatballs)
500g uncooked lean organic minced beef
2 slices of rye bread
1 egg
salt and pepper to taste
mixed herbs
less than a teaspoon of oil (I use 5- 10 sprays of olive oil spray)
sauce:
tin of organic chopped tomatoes
bit of red wine - OPTIONAL
basil
make the rye bread into crumbs
Add the mince
Add the egg
Add salt, pepper, spices, herbs to taste (I have a great organic spice mix that I use)
Mix it all together with your hands (This is usually hubby's job)
Place foil in roasting tin
Preheat oven to 190ºC
Make mixture into 6 meatballs and place on foil
Place in the oven and cook for 20-25 minutes.
Sauce:
Place tomatoes in little saucepan and heat
Add basil and red wine.
Allow to simmer (to reduce water)
It takes about 15 minutes for the sauce to become a nice deep red colour.
